Mint Cookie Mousse Recipe
Sometimes, after a big dinner, we crave dessert, but want something light enough to satisfy but not make us over-full. The following Mint Cookie Mousse is one such dessert that is easy to make (only four ingredients) , very light, and most importantly delicious.
This delicious mousse can be made a day ahead – that way it’s creamier because the cookie crumbs soften , or served immediately with a bit of crunch. It can be poured into individual pudding bowls, or poured into a large beautiful bowl to put on a buffet or pass around the table. Either way, this mousse is decadent and light.

8 Servings

1 cup semisweet chocolate, coarsely chopped (or substitute high quality chocolate chips)
3/4 cup heavy whipping cream

1 cup heavy cream, whipped to soft peaks

1 9 oz. package Mint Fudge Cookies, ground into fine crumbs

  1. Ganache: Measure the chocolate and 3/4 cup heavy whipping cream in a microwave-safe glass container (I use my Pyrex glass measuring cups).
  2. Microwave 3 minutes. Remove from the microwave and let sit 5 minutes. Whisk until thickened. Let the ganache sit until room temperature.
  3. Whip the 1 cup cream until stiff, and gently fold into the ganache mixture.
  4. Fold in the cookie crumbs (reserve 2 tablespoons for garnish).
  5. Transfer the mousse to a fancy serving bowl (or individual pudding bowls); sprinkle with the reserved crumbs. Refrigerate until set before serving.
